I’ve been MIA lately because I have been ingesting twice my body weight with sugar and caffeine. Science guy was away last week and when he returned home he brought company with him that came bearing the gifts of sugar and caffeine. As much as I wanted to deny these temptations I thought it would be rude. So instead, I did like any gracious host would do and I ate my body weight in candy. Yum. No, not really….I kid. Today, I am experiencing a wicked hangover from the candy and caffeine.
I love a good sweet treat though so I thought I would share with you one of our favorite homemade candies. This recipe is easy peasy and tastes better than any store bought junk you’ll find. I like to keep a batch on hand in the freezer to grab one whenever I am craving something sweet.
What you’ll need:
1/2 C. coconut oil
1/2 C. cocoa powder
1/2 C. freshly ground almond butter
1/4 C. maple syrup
Throw all ingredients in food processor and process until blended. Line muffin tin with papers and fill about 1/4 of the way full. Place tin in freezer for about 30 minutes. Remove and place almond cups in airtight container and keep chilled. Recipe yields approx. 8-10 cups.
